Firstly, prepare all vegetables by washing, peeling
Heats a drizzle of oil in a large pot then put the diced onion and cook until is translucent.
Add the minced garlic, the broccoli, chopped potato after 30 seconds. Then pour over 2 cups of water, season with salt and whitepepper and a pinch of nutmeg. Cook until are tender.
When it is cooked, puree the soup with an immersion blender until smooth. In a little bowl pour 3/4 cup of heavycream and add about 3 to 4 ladle of soup than mix it well. Then pour the mixture back into the soup.
When the soup boils again to turn the heat off. To serve, croutons, bacon chips, grated parmesan on top and enjoy!
