Original Greek Salad

Greek salad is a very simple but great salad with ripe tomatoes, bell peppers, cucumbers, onions, olives and creamy feta cheese!

Ingredients
  

  • 3 large, ripe tomatoes (or 5-6 cherry tomatoes)
  • 1 cucumber
  • cup red onion
  • 1 large bell pepper
  • 7 oz good quality feta cheese (200g)
  • cup olive (pitted Kalamata or black)
  • 3 tbsp olive oil
  • tsp lemon juice (or 1-2 tbsp red wine vinegar)
  • 1 tsp oregano (dried)
  • 3-4 leaves of basil (optional)

Instructions
 

  • Prepare the vegetables by washing, peeling.
  • Cut the tomatoes into large chunks.
  • Cut the cucumber into quarters into 1/2-inch-thick.
  • Cut the red onion in half and thinly slice.
  • Cut the bell pepper in half lengthwise then slice thinly.
  • Transfer everything in a large salad dish and add a good handful of olives.
  • Season with salt and sprinkle with a bit of dried oregano and basil.
  • Pour the olive oil and lemon juice or red wine vinegar all over the salad and gently mix until to combine.
  • Finally, add the feta blocks on top and sprinkle more of dried oregano and serve with toast or use it for a side dish and enjoy!

The above figures assume a cup with a volume of 250 ml.
