Simple Poppy Seed Cake with Apricot Jam

I have many favourite cakes and this poppy seed cake is on my top list. There are several reasons for this: easy to make, do not need kitchen machines for it preparing, it consists of basic ingredients that are usually found in the household. It is a real life-saving cake if you want to eat a little sweet after lunch.

Making Poppy Seed Cake Step by Step

Remove the ingredients from the refrigerator at least half an hour in advance. You will be able to work with them more easily. Preheat oven to 350 degrees F (180 C).

Mix the 1/2 cup of butter and 3/4 cup of sugar until foamy. Then add 2 eggs and little by little 1 cup of flour, 1 cup ground poppy seed and 1 cup of milk. If you do not buy ground poppy seed, do not forget to grind it. Finally, stir in 3 tsps baking powder and one pinch of ground cinnamon to it.

I usually use baking paper even if my baking tray does not stick. It will be practical because it will be easier to take the cake out of the baking tray when it has cooled and it will be easier to cut it in half lengthwise.

Pour the batter into the 8×8-inch baking sheet. (You can also use a larger one, in which case, the baking time will be shorter, because the “sponge cake” is thinner and should be cut in half crosswise, not lengthwise). Bake the cake for about 40 minutes or until the toothpick inserted in the centre comes out clean.

If it baked, remove it from the oven and let it cool for an hour. Then take it out of the baking sheet and place it on the cutting board. Cut it in half lengthwise and smear it with your favourite jam and put it on top of each other and press it slightly. Then let it rest for about an hour. During this time, the “sponge cake” absorbs the jam.

Cut it into a larger cube put them on a plate, sprinkle with powdered sugar on top and enjoy!

This poppy seed cake is very tasty with roasted walnuts too. Cut a good handful of walnuts into small pieces, roast a little and stir it into the batter.

It does not matter if your mug is polka-dotted or not, the point is to be the same because it serves as a measuring cup.

  • Preheat oven to 350 degrees F (180 C).
  • Mix the butter with sugar until foamy. Then add the eggs and little by little the flour, ground poppy seed and milk. Finally, stir in the baking powder and the ground cinnamon thoroughly.
  • Lean a baking tray with baking paper, pour the batter over it then bake for about 40 minutes.
  • When cooled, place the cake on a cutting board. Cut it in half lengthwise and smear it with jam, put it on top of each other and press a little.
  • After an hour of rest cut it into cubes, sprinkle it with powdered sugar and enjoy!
