Chicken Recipe with Honey-Mustard Sauce

This chicken recipe with honey-mustard is made special by a combination of various flavours and acids. I love simply made rice and chicken, but because I make them many times, sometimes a little variety is good. I will show you what I mean.

Prepare all the ingredients

Wash and dry the baby spinach leaves. You can also use other greens, for example, collard greens, cabbage (in this case, separate the leaves from the stems). Peel and chop roughly 2 cloves of garlic.

Core and small dice an apple. Put in a bowl and add 1/2 tablespoon apple cider vinegar, season with salt and pepper. Set aside and stirring occasionally. We will use it for rice later.

Combine honey-mustard sauce ingredients

In a smaller bowl whisk together the 1 tablespoon honey, 2 teaspoons mustard, 2 tablespoons olive oil, 1 teaspoon balsamic vinegar, 2 teaspoons lemon juice, 1 minced garlic and season with salt and pepper.

Cook the Rice

Heat a drizzle of oil to the pan and add to 1/2 cup rice. Cook for 2 to 3 minutes then pour over 1 cup of water, cover and cook for about 12 to 15 minutes or until the rice is tender. (I prefer this method and I fry the rice in a little oil than just cook it in water because the rice will be fluffier).

Steam the Spinach Leaves

In a medium pan heat 1 teaspoon of olive oil and add the chopped spinach leaves to it. Cook and stirring occasionally until slightly wilted (1 to 2 minutes). Add the chopped garlic to it and red pepper flakes as you would like. Then add ¼ cup of water and cook, stirring occasionally, until the spinach leaves are wilted and the water has cooked off. Transfer to a bowl, season with salt and pepper if desired and to keep warm.

Wipe out the pan.

Cook the Chicken

Season with salt and pepper to both sides of the chicken. In the same pan heat 1 teaspoon olive oil and add the seasoned chicken. Cook 6 to 7 minutes per side or until cooked through.

Finished the Rice and Serve

Add the marinated apple to the cooked rice, season with salt and pepper and stir to combine. Serve the cooked chicken with the apple rice and cooked spinach leaves. Top the chicken and rice the finished sauce. Enjoy!

Ingredients
  

  • 2 chicken breasts (boneless, skinless)

For Apple Rice

  • 1 apple
  • ½ cup Jasmine Rice
  • ½ tbsp apple cider vinegar
  • salt and pepper (to taste)

For Spinach

  • 1 bunch baby spinach leaves (collard greens)
  • 1 tsp olive oil
  • 2 cloves garlic
  • ¼ tsp crushed red pepper flakes (to taste)
  • ¼ cup water

For Sauce

  • 1 tbsp honey
  • 2 tsps mustard
  • 2 tbsps olive oil
  • 1 tsp balsamic vinegar
  • 1 garlic small
  • 2 tsps lemon juice
  • salt and pepper (to taste)

Instructions

  • Wash and dry the fresh produce. Core and dice the apple, chop the spinach leaves.
  • Peel and chop the cloves of garlic.
  • Place in a bowl the diced apple, add the apple cider vinegar, salt and pepper then mix it and set aside to marinate, stir occasionally.

Combine the honey mustard sauce ingredients

  • Whisk together the honey, mustard, olive oil, balsamic vinegar, lemon juice, minced garlic, a pinch of salt and pepper.

Cook the Rice and Chicken, Steamed the Spinach Leaves

  • Heat a drizzle of oil to the pan and add to the rice. Cook for 2-3 minutes then pour over 1 cup of water, cover and cook for about 12 to 15 minutes or until the rice is tender.
  • Heat 1 tsp of olive oil and add the spinach leaves to it. Cook and stirring occasionally 1 to 2 minutes.
  • Add the chopped garlic and red pepper flakes, season with salt and pepper. Cook, stirring frequently until slightly softened (1 to 2 minutes).
  • Add ¼ cup of water and cook, stirring occasionally, until the spinach leaves are wilted and the water has cooked off.
  • Transfer to a bowl, season with salt and pepper if desired and to keep warm.
  • Wipe out the pan.
  • Add salt and pepper to both sides of the chicken.
  • In the same pan heat 1 tsp olive oil and add the seasoned chicken. Cook 6 to 7 minutes per side or until cooked through.

Finished the Rice and Serve

  • Add the marinated apple to the cooked rice, season with salt and pepper and stir to combine.
  • Serve the cooked chicken with the apple rice and cooked spinach leaves. Top the chicken and rice the finished sauce and enjoy!

The above figures assume a cup with a volume of 250 ml.
